Can you Kho?


A classic Vietnamese way of cooking food, to kho means to simmer in a sauce of sugar, fish sauce, black pepper. You can kho damn near everything but the most popular choices are pork and fish.

Speaking of swine, one of the all-time dishes in the Socialist Republic of Vietnam is: thịt kho nước dừa. So tender. So savory. Order up.

The dish is backwood barnyard simple. Pork belly is simmered KHO-style with fish sauce and caramelized sugar and fresh coconut water (liquid from inside a coconut!). Serve it up with steamed rice and veggies and you've got lunch.
